Chunky Chocolate Mountains...

My 3 year old daughter and I were playing Candyland for the first time and a text message came through to my phone with a request for chocolate on chocolate cupcakes. I normally make a Ghiradelli type frosting and then scrape some chocolate bar on the top but this time I thought that I would do a bit more.

Here are the Chunky Chocolate Mountain cupcakes..inspired by Candyland...(some with Ghiradelli White Chocolate flakes and some with Ghiradelli chips)

Ghiradelli frosting with mini chips and chocolate fudge cupcake...I had HALF of one and I think my chocolate craving is gone for about....a full day! YUM!!

Hi friends,

I haven't blogged for awhile! I guess it was because I didn't think that Chicken Pot Pies and flower pot painting should be listed on my blog about cupcakes!

Well I have had a obsession with smores lately... I don't know what it is but I can't seem to stop making things with the three perfectly matched ingredients!

I had the wonderful opportunity to host and teach a cupcake class to a group of homeschool ladies! Here are a few photos of the ladies and their cupcake fabulous!

As a previous corporate trainer, I decided to revisit my love for teaching and offer cupcake classes for birthday parties, bridal showers or a girl's night out! You pick the theme and I supply the cupcakes!
Class prices are based on a "what you need" basis and the number of people attending. Decorations and frosting costs will be discussed upon booking.
Kids parties are limited to 15 children and age appropriate with parent/help involvement.

David and Beth's wedding was a sweet success! Red Velvet/Cream Cheese cupcakes with some added Chocolate liquer in the mix topped with a red raspberry in ruffled cups.
The cake was made by a friend and topped with some great flowers. I did help with all the flowers and I am now interested in possiblly taking a floral class!

Double the trouble with hot cocoa in this chocolate mix. Add a few chips and voila! You got two cupcakes made for each other.

These were made for a rehearsal dinner for a friend of mine. Gum paste hat, bow tie and veil.

She brought me a picture and as soon as I can find it online, I will give credit where it is due for the idea of the decor.

Friend of mine wanted cupcakes to bring to new neighbors where SHE moved. So I thought making something eye catching and "recyclable" for the neighbors would be a good way to say hi!

So I LOOOOVE those mints that they put out at baby showers, you know those mints that melt in your mouth and call your name over and over as you walk by the table. Yes, those!
I decided that I needed to come up with a way to incorporate them in a cupcake...and here it is.

Vanilla cupcake with a fluffier frosting (less powdered sugar and a tad more vanilla) topped with sprinkles and mint meltaways. Delicious bite after bite and especially good after a handful of those other mints.

Great for baby showers and birthdays!

Angel Food Cupcakes

Yield: 24 cupcakes
Ingredients:
1 cup cake flour
1 1/2 cups granulated sugar
1/4 tsp. salt
12 large egg whites
1 tsp. vanilla extract
1 1/2 tsp. cream of tartar
Directions:
Adjust oven racks to the two lowest positions.
Preheat the oven to 375° F.
Line two cupcake pans with paper liners.
In a small mixing bowl, sift together the flour, 3/4 cup of the sugar and the salt; set aside.
In the bowl of an electric mixer fitted with the whisk attachment, beat the egg whites with the vanilla and cream of tartar on medium-high speed until soft-medium peaks form.
Gradually add the remaining 3/4 cup sugar, continuing to beat until stiff peaks form.
Gently fold in the dry ingredients using a rubber spatula, being careful not to deflate the batter.
Divide the batter evenly between the prepared cupcake liners and bake for 12-15 minutes or until light golden.
Let cool in the pans for 5 minutes, then transfer to a wire rack to cool completely. Serve with whipped cream and fresh fruit, if desired.

Ok ladies and (well you gents can read this too), I have done what you all have been asking and applied for the casting on Cupcake Wars!

I am glad that all of you are really confident in my baking skills. I am going to have alot of practice in the next few months or so... if I don't win, that is ok. It would be a honor to be side by side to some amazing people that love what they do as I do.

My Community Pregnancy Clinic ladies WILL be the winners of the prize if I do win. I would like to donate all of the money to the CPC to continue to do what they do for these women!

I want to encourage them to love on their babies and have the resources to do so!

Today, a friend asked me about the cupcakes I make and why I even wanted to take on such a task during the summer heat. My answer..."Originally, I did it to help single moms".

She looked puzzled and once I explained it to her, she asked that I share on my blog this story...

I don't like to brag or boast about serving others, so please don't take this as a pat on my back.

It is where I was led and I will continue to do it until my last cupler breaks...

(inside baking joke)...

About the time that Mati was able to say "Cake Cup" was around the same time that I was starting to dive into making cupcakes. She was about a year old and I sat in amazement watching her devour her "cake cup" and I thought how blessed I was to have a baby that created the mess I was about to clean up. I thought about how sometimes we take for granted such a beautiful innocent child and the blessing that God has granted us to raise them, teach them, bake for them.

During this time, I was about to attend a speaking engagement for the Community Pregnancy Clinic. Standing before a beautiful crowd of single moms, all of which had their children in childcare, waiting to hear my story about how I came to be a single mom, found Christ and then remarried had another baby, I realized that years ago when I was 19, I could have aborted my first daughter (who is now 18) and life could have been 'easier'.

Life was hard but at the same time a HUGE blessing as my 18 year old daughter, Ashley, had been the 'baby' that brought me to know the Lord. I could not ask for a better gift.

With that in mind, I want to serve other single moms with celebrating their babies-whether it is for a baby shower or a birthday. No charge for the cupcakes- just a promise that celebrating these beautiful blessings is the biggest celebration for them-good times or bad.

Thank you friend for asking me to post this. Tonight, I am heading back into my daughter's room and kiss her, and her big sister.

Please let any single mom that lives in the Simi Valley/Moorpark/ Thousand Oaks areas that I provide this to any single mother and have them contact me.

BOYSENBERRY CUPCAKE

Vanilla Cupcake with Boysenberry in the mix. I had extra boysenberries so I put them in the frosting. Make sure that when you do this, you get sweet berries and you take a little taste as you add them. It can become sour if you are not careful, good, but sour.

Winne the Pooh Bee hive cupcakes for Baylen's Birthday. Just a vanilla or chocolate cake with white frosting but the making of these little hives were really exciting and fun!

The bees were made with tootsie rolls and fondant for the yellow lines. The wings are made of sugar circles.

Here is a very yummy Velvet Kiss Cupcake. I made these with a real Hershey's kiss inside the middle. But there is also something else, pudding in the red velvet cake mix...moist and yummy!
These were THE cupcakes that made me really wanna stop doing cupcakes because they are soo good.
Eating them cold is usually my belief but these were delicious warm out of the oven and without any frosting. Maybe a good coffee.

This were made for a funeral (same day I was also creating for a baby shower). A wonderful friend of mine (Hollie from Hollie Would flowers) asked me to make some and requested that they represent her grandmother whom passed.

Hollie is a florist (see left side of page) and so the roses were a little love sent from me to her on this very difficult day.

HOT FROSTED COCOA CUPCAKE

This recipe I got from a few places. Weird how I tried getting this right the first time and ended up doing it without the wrong cocoa... hot chocolate cocoa is pretty good. Anyway, thankfully I had an order that evening so none of these stayed on my counter for long... YUM!

You can also add chocolate chips or heath chips to this- very delicious!

HOT FROSTED COCOA

3 cups all-purpose flour

2 cups granulated sugar

1/2 cup unsweetened cocoa powder

2 teaspoons baking soda

1 teaspoon salt

2 cups water

3/4 cup vegetable oil

2 tablespoons white vinegar

2 teaspoons vanilla extract

Powdered sugar for sprinkling

Heat oven to 350°F (175°C). Line 2 medium-sized muffin pans with paper baking cups.
In a large bowl, combine flour, sugar, cocoa, baking soda, salt, water, oil, vinegar and vanilla and beat with electric mixer on medium speed until thoroughly blended.
Fill prepared muffin cups 3/4 full with batter.
Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack.
Sprinkle with powdered sugar or frost as desired.

My berry black and blue cupcake is a standard vanilla cupcake with added black berry and blue berries to the mix. It was delicious with the combination of vanilla frosting.

Great for the spring or summer parties near the pool with a glass of berry wine!

The cupcakes were made in chocolate that got to the party but I thought "why not banana- it only seems right"...

Chocolate Frosting with Nilla Wafers

You can also change up the recipe and add walnuts or chocolate chips!

GO BANANAS!!
Ingredients
1/4 cup of buttermilk
1/2 cup shortening
2 eggs
1 1/2 cups of sugar
2 cups of all purpose flour
1 teaspoon vanilla extract
1 cup mashed ripe bananas (when they just become brown are perfect)
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
Directions
In a large mixing bowl, cream shortening and sugar. Add the eggs, vanilla, bananas and buttermilk. Combine the flour, baking powder, baking soda and salt; add to banana mixture. Fill 18 paper-lined muffin cups two-thirds full.
Bake at 350 degrees F for 15-20 minutes or until a toothpick comes out clean. Remove immediately to wire racks to cool completely. Frost cupcakes with your desired chocolate frosting- I like homemade and add nilla wafers for ears and mouth. Pipe red frosting (or use icing writer) to make the mouth. Use black for eyes.

These were inspired by some really cool candy store (sorry I cannot think of the name- I will get back to you) and I found these "robin's eggs" that are filled with caramel.

I made some dark chocolate cupcakes and decided to get a little crazy and lay some eggs on top (hee hee).

I love when you can eat EVERYTHING on the top of cupcakes instead of picking things off. I am a big fan of eating the entire thing...so I don't make cupcakes with items you can't eat unless it is an occasional pick to get the caramel out of your teeth!

When I was a little girl, I remembered going to a party and seeing a cupcake that was phenomenal. Although it was probably something very simple with a few sprinkles or chocolate jimmies, I knew that there was something special about these gems.
After a few cake decorating classes, a few bumps and spills and an occasional "bleck" from trying out some new flavors, I finally found something I love to do- BAKE!

Here is my first cupcake that I made for an Employee Appreciation Day during Valentines Day.
